Susan’s alcohol-free mule

Ingredients
1 lime (1-2 tablespoons of juice, fresh is best)
1 tbsp of simple syrup
1/4 cup club soda
3-4 mint leaves (torn, optional)
3/4 cup ginger beer (make sure it’s alcohol-free)
Crushed ice

Instructions
· At the bottom of the cup, pour the lime juice, simple syrup and club soda.
· Add mint leaves if desired.
· Fill the cup about halfway with ice cubes.
· Pour about 3/4 a cup of ginger beer over ice.
· Garnish with mint leaves and a lime wedge if desired and serve.

Terri’s Hot Apple Apple Cider
Ingredients:
1 gallon Cider
1/2 tsp. Caramel
3 cinnamon sticks and more for garnish
8 apples
lemon juice, for brushing
Post Sober October: 1 1/2 tsp. whiskey, preferably Fireball (optional)

Instructions:

In a slow cooker, combine the apple cider, cinnamon sticks and caramel. Cook over low heat until heated through, about 2 to 3 hours.

To Make Apple Cuts: Before you buy your apples from the store, you must first make sure you place them on a flat surface to make sure they will sit properly on the counter. You don’t want your hot cider to tip if you put down your cup of apples.

Then cut the top of each apple. Use a melon spoon to scoop out the inside of the apple until you are about 1/2 “or less from the bottom of the apple. Be careful not to make a hole in your cup!

Store until party time by coating the inside of each apple with lemon juice to prevent the apples from turning brown.

Pour the hot cider into apple cups. Decorate with cinnamon sticks and serve immediately.
