How to make delicious barley soup with vegetables [Recipe]

What exactly is barley? According to the Merriam-Webster dictionary, “It is a cereal grass. . . used in particular in malt beverages, breakfast foods and animal feed. This week, it’s the ingredient that really defines our What is cooking? recipe apart and makes it a unique dish to try at home.

Kelly Bland, from the UK Co-operative Extension Service, shares the agency’s recipe for barley vegetable soup. Served in the spirit of hearty comfort foods to savor during the winter months, this particular recipe is different in that it features a cup of pearl barley.

The recipe is relatively easy to make at home. Your only real challenge may be finding barley at the grocery store. But if you find any, try this recipe!

BARLEY VEGETABLE SOUP

1 medium onion, diced
1 tablespoon of garlic powder
2 tablespoons of olive oil
1/2 lb carrots (about 4)
1 can (28 ounces) unsalted diced tomatoes
1 cup pearl barley
1 tablespoon dried Italian seasoning
6 cups low sodium vegetable broth
1 potato, diced
1 cup of frozen green beans
1
/ 2 cup frozen corn
1/2 cup frozen peas

Directions:

1) Heat a large saucepan over medium heat and add the onion, garlic powder and olive oil.
Cook 2 to 3 minutes.

Add carrots, tomatoes, barley, Italian seasoning and vegetable broth. Stir for
combine. Cover with a lid and leave the soup
simmer for 30 minutes.

Add the diced potato. Cook 10 minutes, or until the potato pieces are tender.

Add green beans, corn and frozen peas. Stir and cook for another 5 to 10 minutes.

As you can see, the vegetable and barley soup takes about an hour to cook, but most of that hour just requires the soup to simmer for the flavors to blend together.
